Chef Nicole carries over 25 years in hospitality, including front and back of the house experience. Their passion for food began as a small child eating things like anchovies or hot peppers or 6 legs of chicken, all at the age of 3. Nicole’s enthusiasm for gardening, foraging, fishing and cooking has turned into a lifestyle and career.
Chicago, is where Nicole graduated from culinary school and began a professional career in the kitchen. From a line cook at a French bistro in Hyde Park, to Sous and Banquet Chef at 2 hotels on Michigan Avenue, to Production Manager of the Chicago Starbucks commissary kitchen. Nicole has an extensive background with a variety of cuisines and ingredients.
Nicole makes a conscious effort to create healthy, nutrient dense and wholesome food. After being introduced to the Paleo lifestyle over 15 years ago Nicole’s cooking style is seasonal, local and vibrant. As the seasons change, so do the menus. Nicole aims to deliver a unique experience with flavors and pairings you may not haven’t tasted before. But if a trip down memory lane is your wish, that can delivered as well. Nicole’s passion for growing organic produce is highlighted, when transformed into an unforgettable meal.
