Chef Nicole carries over 25 years in hospitality, including front and back of the house experience. Their passion for food began as a small child eating things like anchovies or hot peppers or 6 legs of chicken, all at the age of 3. Nicole’s enthusiasm for gardening, foraging, fishing and cooking has turned into a lifestyle and career.
Chicago, is where Nicole graduated from culinary school and began a professional career in the kitchen. From a line cook at a French bistro in Hyde Park, to Sous and Banquet Chef at 2 hotels on Michigan Avenue, to Production Manager of the Chicago Starbucks commissary kitchen. Nicole has an extensive background with a variety of cuisines and ingredients.
Nicole makes a conscious effort to create healthy, nutrient dense and wholesome food. After being introduced to the Paleo lifestyle over 16 years ago; Nicole’s cooking style transitioned to seasonal, local and vibrant. As the seasons change, so do the menus. Nicole aims to deliver a unique experience with flavors and pairings you may not haven’t tasted before. But if a trip down memory lane is your wish, that can delivered as well. Nicole’s passion for growing organic produce is highlighted, when transformed into an unforgettable meal.
